My little 'Dare Devil' muffins - Sweet Potato & Cacao

What's life without a little daring adventure every now and then? While becoming a study hermit limits my outdoor adventures, my dare devil flare of the day turned out to be with a combination of Sweet potato, Carrot and my all time favorite Cacao powder mixed into to one healthy (and tasty!) muffin! There is no guilt trip with these muffins, you will have the hint of chocolate but i assure you it is only the super power of the cacao! The mashed vegetable give the muffins a moist texture with a crunchy edge, plus they have an abundance of nutrition which you can get whilst still enjoying your morning or afternoon tea treat. Sounds too good to be true? Take a little dare devil time to try this combination and see for yourself :) 

P.S. did i mention they only take 25 minutes to make including vegetable preparation time??


'Dare Devil' Muffins (Sweet Potato & Cacao) 

1/2 cup white SR flour 
1/2 cup Wholemeal SR flour
1 cup of Rolled Oats
1 tsp baking powder
1 tsp baking soda
1 tsp ground sage
2 Tbsp Cacao powder
2 cups mashed carrots and sweet potato (about 3 medium carrots and 1 medium sweet potato peeled, chopped and cooked in the microwave until soft)
1 egg lightly beaten
1/4 cup Olive oil (or vegetable oil) 
1 tbsp white vinegar

Mix all the dry ingredients until well combined. Add the mashed carrot, sweet potato, egg, olive oil and vinegar and stir until just mixed. 
Scoop into prepared muffin tray and bake in preheated oven at 180 degrees for 25-30 minutes until a prick comes out clean and lightly browned on top.

My tip for my next batch... swap the sage for a little chili flakes, it will give that little extra flare the sage is trying to create!

Orange & Cranberry Cookies (Sugar free)

The end of our 4th year rotations and the beginning of our 2 week study period before exams, my flat mate and I have decided to have a competition of who can drink the most cups of tea whilst studying over the 2 week period in an attempt to get through our 400 odd tea bags before we move out of college!! But hey we also get the added anti-oxidant benefits to fight cancer :) Its day 2 and we are already on 4-5 cups a day each, my only problem is every time i have a tea i need something little alongside it such as a biscuit. So i had a 'bake break' and experimented with another batch of healthy sugar-free biscuits inspired by a few extra oranges in the fridge needing eating and cranberries. 

Why cranberries? 
Cranberries are a rich source of dietary flavonoids and other phenolic acids that research has shown may provide a variety of health benefits. A growing body of evidence has linked the phytonutrients found in cranberries to a number of conditions, including the promotion of urinary tract health and the prevention of cardiovascular disease counteracting cholesterol plaques, asthma, certain stomach ulcers and even cancer with its abundance of anti-oxidants. Studies have  also shown that cranberry proanthocyanidins (PACs) are the novel compounds responsible for cranberry’s bacteria-blocking antiadhesion properties and can prevent plaques growing on teeth and hence assist with dental hygiene.  In addition, the berries are an also good source of many vitamins like vitamin C, vitamin A, ß-carotene, lutein, zea-xanthin, and folate and minerals like potassium, and manganese. Plus the berries add a little sweetness to these sugar free cookies :)
Well with cranberry health benefits and our tea competition with a few of these yummy treats i may by a little heavier (but healthier) by the end of these 2 long study weeks!! 

Key ingredients

Orange & Cranberry Cookies (Sugar free)

Ingredients

2 cups Oats
1 cup wholemeal SR flour
1 tsp Baking powder
1 tsp Bicarb soda
1/2 cup dessicated coconut
2 eggs lightly beaten
1/2 cup milk
1 Tbsp Honey
2 Tbsp grated orange rind
1/2 cup freshly squeezed orange juice 
3/4 cup dried Cranberries

Mix dry ingredients, orange rind and coconut in a large bowel. 
Add together egg, milk, honey and orange juice and mix into dry ingredients. 
Roll into drops and lay onto an oven tray lined with baking paper and bake in moderate oven for 12-15 minutes or until lightly browned.

And the end verdict? I think the orange and cranberry combination is a win!! Give me these with a tea (or 400??) any day... Yum :)

Back into Surgery

It was so hard to get up at 6am Monday morning to get back into the swing of 7.30am hospital starts. One thing about having a week off in Adelaide is i did feel more revived and ready to get back into the last and probably toughest few weeks of our fourth year with exams coming all too soon!! It was really noticable the difference in how i felt compared to the others who hadn't had a break, they were over it and you can see how important breaks really are. Although i missed last week, Monday was a public holiday which given the circumstances i think me turning up that day was equivalent to 3 days of a normal week! There were barely any doctors and the only students i saw were myself, my team mate and Emma. On a positive it made talking to patients so much nicer and less intrusive with less people around!! After chatting to a few i headed back to work on my case study. I also caught up with Lex and had a lovely lunch out in the sun along Matilda Bay with Tilly close by. I almost felt normal joining all the families and friends enjoying the lovely public holiday weather :) I also treated myself and went for a run through Kings park, uni games have made me more determined to get back into running again as i realised i still have the want and determination to!! I went to Kokoda stairs and realised just how much running strength i have lost, i was sore the next day but it was so good though.

On Tuesday i went to the morning hand over meetings but couldn't find our team of doctors, so i headed back early to work on more case studies! Had a trip to the shops to get some little bits of food and had to have a sleep i was so tired today! Once i was awake i went to an RPM class before more study, a typical study day! Wednesday was more exciting :) after usual rounds we went to gen med clinic and got a tutorial on diverticulitis and abdominal x-rays, i ran to CTEC to get a WWC form signed then made it back to theatre to see an incisional hernia repair and a laparoscopic cholecystectomy!!! It has been on my 'list of things to see' for surgery i was always so interested in how they get the gall bladder out of the little endoscopic holes! The anatomy we saw was amazing, they put aitr pressure in the abdomen to lift the abdominal wall off the organs to carry out the procedure, i was actually looking at a real and healthy liver, gall bladder, stomach... wow! I loved the green/blue colour of the GB an dhow the liver was a ruby red. Of course the GB had stones and the lady had pain from them so we were taking that out... and i realised the GB was alot smaller than it appeared, and so squishy like a jelly fish it just easily slipped out of the endoscopic ports! We actually got to hold it and being to squishy and slippery (apart from the stones) i was worried i would drop it! Thankfully i didn't :)

The rest of the week was lots of study, trips to the Post office to get my working with children check renewed, tutorials, labs and a few trips to the gym. I have started going to CX30 classes more now, i really like them. Pump classes don't hurt my core anymore but these classes i feel like my core is strengthening!!! It uses an elastic tube to work your glutes, legs and arms as well all in a sweet 30min class :) I also had another kings park run and trip to kokoda stairs, thankfully i didn't end up as sore after this trip even though i did one more stair climb compared to last time yay!

Saturday with some beautiful spring weather Kyle and I decided to head to Kings park for a picnic! He bought the picnic basket, buns and chicken and i got some salads. We walked to Synergy and joined the many families and parties around the park. I think we had the best picnic, it was amazing :)


I had another run through Kings park Sunday morning and although i enjoyed it i better stop for a few day or else i will hurt my foot again, but it was a nice way to start the day followed by washing and of course study. I headed to Kyle's in the evening and a group of us did some OSCE practice for the exams in a few weeks! And just like that it was Sunday night again and in front of us our last week of Surgery... our last week of fourth year actually! (providing we pass exams) Scary, but i am looking forward to the summer break.

Banana Cacao Truffles (Sugar free)

Banana Cacao Truffles (Sugar free)


3 small ripe bananas, mashed
1 Tbsp honey
1 tsp vanilla essence
1 1/2 cups oats
1/2 cup desiccated coconut
1 Tbsp Cacao powder
1-2 weetbix crushed

Mix banana, honey and vanilla essence. Add in oats, coconut, cacao and weetbix and mix together. If a little dry try adding 1 Tbsp of yoghurt or until mixture is moist. Roll into balls using a teaspoon and roll in extra cococnut. Store in the fridge or freezer and enjoy!

If you like the extra crunch, don't crush the weetbix as much and add another 1 or 2 :)
Optional additions
  • Almonds, cashews, hazelnuts, walnuts (chopped)
  • Cranberries 
  • Pepitas, pumpkin seeds... anything you fancy!  

Celebration - A night out in RAdeliade and Med Dinner

It's always nice to have the feeling of relief after a running competition. All the preparation you do before hand in the lead up and the psychological impact competition can have on your mind, but that is what makes competition well, competition! None the less we were ready to celebrate our runs and success Thursday night!

We went out to Mexican for dinner, i have never had Mexican outside of college and didn't really know what to expect but fell in love with the meals! I also tried a Margarita everyone was drinking and actually liked it :) We then made our way to our apartment. When everyone had arrived at the start of the week we were given someone to look over to 'fine' them for things they have done that are silly or embarrassing throughout the week, so we uncovered our people and had a bit of fun with them! And me... i got a fine for having healthy 'gourmet' lunches everyday :P but i think one night have been when i did the dishes and the drain made a loud noise so they all teased me for farting!! This was followed by a round of 'Sudden death' where there is a pack of cards made into a circle on the table and each person picks a card, the number corresponds to something you have to do and if the ring is broken you have to drink the 'master drink' in the middle which everyone adds a little of their drink too. They let me play with water ;) it was quite funny! My favorite is the secret 'thumb master' where one person secretly puts their thumb on the table and everyone has to follow and the last person to realise has to drink. When you even can't say 'drink' or people's names it gets even trickier!

We then had a brick walk into the city to Hindley street, the place to be. Once in there all you could see were uni games students dressed to impress having a good time, the streets were certainly alive!! It was really good to see the 'Red frogs' vans around who give out red frogs, doughnuts, water and pancakes to try keep everyone hydrated and with some sort of sustenance  They also have St John's people around for any intoxication or injuries, a good set up if you ask me! I had a really fun night, i am not a going out person and rarely do so although i started off a little nervous i am glad i went out! We went to the Red Square, The Dog and Duck and the Woolshed, i loved them all they are set out so much better than Perth clubs (the limited i have been to at least) with 2 stories of different themes areas and actually good music! We had a few dances to Gangnam style which funnily enough was played at the right time when we entered each of the clubs... fancy that!! I even had my first shots! (make that 2) and didn't feel any different... maybe i have more tolerance than i thought (or had lots of mexican to eat) but i had a vanilla G one and a Bailey's which i actually liked. After dancing the night away i left them at 2.30am to get a taxi back for some rest seeing as though i had Med ball the next night. I would have loved to have stayed the extra night and head out again seeing as though our girls captain couldn't join us that night, but hopefully we will have a catch up back in Perth together and of course see each other at the track!!

Back at the hotel i managed to get 4.5 hours sleep before it was time for another girl Rachel and i to catch a taxi to the airport to fly home. I was with Jetstar an hour earlier but after breakfast at a cafe and a nice chance to chat my flight was delayed an hour due to storms in Melbourne so she ended up taking off before me with Qantas! We finally got going and with my packed lunch and music to keep me occupied i successfully completed my first airplane trip by myself :)

I was spoilt at the airport to be picked up by Kyle with a lovely white rose!! It was good to see him after being away :) We made our way back to Trinity and i unpacked before getting ready for the next night out... Med Dinner/Ball!

The theme was Soiree in the Snow at the convention centre, i always love their decorations. this year they had lots of white couches, fake snow which was rather slippery to stand on! Mirrors and a smoke machine. But before we got there Kyle and I went to Illy's house in the city and had lots of photos and they had tequila shots.

It was a rather fun walk there, maybe it was the lack of sleep and excitement of being dressed up with everyone but i seemed to be on a high! It was a nice night chatting to everyone, having a nice 3 course meal and dancing a little, the DJ was rather bad but that didn't stop most people!
By midnight i was rather tired, my week and nights out had caught up with me so Kyle and I headed back to get some much needed sleep. A great end to a wonderful week :)

Peanut Banana biscuits (Sugar and egg free)

Another Sunday, another trek across the college grounds to the laundry. But i like laundry day now, i challenge myself! While my washing is on i use the 26 minutes to see what 'healthy and easy' baking i can do while i wait :) This recipe was based on my other banana-oat cookie recipe, and i even had a minute to spare once i walked back to the laundry while my washing finished its last spin! Into the oven they then went as i pegged out my washing and when the pegging was done and washing was clean, i had a lovely warm biscuit and tea to sit down to. They are biscuits but they come out quite soft with no butter or sugar, sort of between a muffin and a biscuit... so i call them 'Muskits!' :)

Peanut Banana biscuits (Sugar and egg free) 

1 cup mashed ripe banana
1 teaspoon ground cinnamon
1 tsp vanilla essence
1/4 cup natural yughurt
1 1/2 cups rolled oats
1/2 cup SR flour
1/2 cup desiccated coconut
1/4 cup organic peanut butter or hazelnut spread (Macro :))
1/4 cup vegetable oil
Optional - 1/2 cup cranberries or sultanas

Preheat your oven to 180 C. (moderate oven)
Combine all the ingredients into a large bowl.
Mix together until combined.
Form 24 small cookies. You can use a tablespoon, teaspoon or your hands.
Flatten slightly then sprinkle with rolled oats.
Bake for 15 minutes or until golden.

Makes 24 small 'Muskits' 
Because i love peanut butter i warm them slightly and add a layer of peanut butter on top, and enjoy with a cup of tea, yum!
On a different note ever tried sliced apple with peanut butter? that is pretty good too!!

Last competition Day - Uni games

It was exciting for the girls today with the final of the 800m on this morning, they were all feeling a little nervous! The funny thing about uni games is there is a whole spectrum of athletes, those who are profession and wanting to go to the world university games, those who are good, those who are average, the injured and those just going along for a bit of fun and experience. But the finals are usually quite serious for most! The guys 5km race was first up and we got to the track in time to watch them all, there were a few PBs which was great to see but no one could catch the guy out in front who holds the current record and has been to the world uni games!

Soon the girls were all warmed up and ready to go and before you could say go they were off! It was a great race to watch, some people thought Moni was the one to win but there was a younger girl who was so fast and blitz everyone from the begining and got a uni games record of 2.06min!! It was so good to see. Although our UWA girls didn't medal they all ran so well :)

We watched our Triple jumper fly through the air, she had to pull out with a sore ankle but still did a few good jumps! Next year with uni games in mind for the Gold Coast i am going to do Long jump :)

 Then it was time for more relays! The guys had their 4x400m relay and once again with long-distance runners were not the favourites to win but had a good run all the same and experienced the dreaded 400m lactic!!

 Then it was our turn, i joined in the 4x100m relay and the Medley relay running the 200m. I was nervous again, could i sprint?? But so excited as i love relays!! My hands were sweaty i hoped i could hold the baton! We had the power of the green head bands and a few 'rigs' drawn on for luck. I was running second which i'm not sure was the wisest move being the longest leg apparently but at least my change over was sheltered by the hammer throw net :P The first gun went for a false start as the girls next to us from Melbourne false started, but with the second gun they were off! It was daunting see the fast sprinter Amy come towards me so fast, when should i take off? will she run into me?? but we changed successfully and now all i had to do was sprint as fast as my legs could let me! It was hard to tell where we were coming but i think i held our spot and passed to our triple jumper Janay who took such as strong bend and passed it to our last runner Rachel... and we were coming third!! She held on the rest of the way and we crossed the line to get the bronze, YAYYYYYYYYYYY!!!!! i was so excited! i was jumping across the field to meet the others and celebrate! I may have been too excited but i didn't care, with only one main sprinter on the team we did so well! :)

Not even 20 minutes later was the women's Medley relay final. It is an 800m run, 400m and 2x 200m runs. There were more than 7 teams so they started off with the 800m run first. Keeley started us off and ran so so well even faster than her 800m run in the final this morning!! She put us into third place!! Rachel was next with the 400m run and gave a strong race, we were still third!! Then i was next for a 200m (gulp!) I kept telling myself all i had to do was sprint twice as far as i just did and i would be right!! We had a little clumsy moment with the baton and my heart skipped a beat but we didn't drop it and i was off!! I don't think i could have made my legs go any faster they were hurting by then end, i was excited to be slowly catching the girl in second place but the girl behind me came up and was right on my tail! I handed the baton to our last and fastest runner Amy in a close 3rd/4th position, but once she was off the other runner in 4th could not catch her... and we won another bronze!!!! I was so relieved i didn't let them down with my sprint especially after the others ran so well in their almost pet events! It was a wonderful way to end the week and although i was hobbling across the oval this time after my foot gave way after the sprints (i know i gave it my all!) we were all so excited to win the bronze again!!

With the competition and more serious part over, i felt sad to leave Santos stadium. I was nearly going to pull out of uni games but was so glad i still went, the experience and the people i met are amazing, it has been so much fun. Next time i am at Santos stadium i will be faster whenever that may be. But one thing i do know is that my love for running on the track has not gone and i am more determined to get back to a good levels of fitness and speed again and race to my hearts content! I can't wait for the summer season of athletics to come with new goals in sight and challenges to try. No matter what the training brings injuries and all i will try my best an who know what the next athletics season will bring. For now i have 2 days of celebrations and time to let my hair down a little and have a bit of fun! I think i deserve it :)

Uni Games Competition Day 2

Most of us were up early the next morning on a warm Adelaide day to prepare for our next event... the 800m!! We had one runner in the men's and 4 of us girls in the heats! We were lucky enough to catch a lift to the stadium with a UWA coordinator and not have to catch a taxi. At the stadium we did our warm up and got called into the marshelling area as they counted the number of participants wrong and thought they could squish us into a straight final tomorrow, but finally figured we needed 3 heats for us all! I was just glad to run the race today as i couldn't wait a whole one more day! After my 1500m i still had very little idea as to how fast my 800ms are atm but didn't expect anything great!

I was in the 2nd heat, the race was a bit of a blur really, i started in lane 5 and we all move to the inside lanes after 100m. The faster runners took to the front right away and i kept with my goal of sticking to the back of them. The first lap went in what seemed like a flash but was 1.11min, on the second i was expecting the same lactic burn as in the 1500m but it was no where near as bad! maybe i didn't try as hard :P but i crossed in 2.32.11min which wasn't too bad considering, my PB is 2.19 and i hope to break that this coming season! It was a relief to have that one done too and was i was so happy for the other 3 girls who made the final, go UWA!!!

By lunch time we all took advantage of the lunch break and enjoyed a nice relax by the track :)

That afternoon the relays started!! Given i pulled out of the individual 400m race i was keen to run the 4x400m relays, but we already had 4 stronger 400m runners who had a great chance of a place on the podium! They all ran so well in the straight final and in the end won a convincing silver!! Great job girls!!

The guys had the 4x100m race and having a 5km runner, 3km steeplechase runner, a pole vaulter and a 1500m runner who rarely sprint in their life they did well in the relay and had a bit of fun along the way :)

Moni and Amy also had their 400m women's final and with a great race Moni finished with a bronze!! The girl who won gold is amazing and won the 100m, 200m and 400m way ahead of the field, such as inspiration to watch her run she is so strong!! It made me determined to get back into sprinting and the 400m's :)

 A highlight of the track was when the red bull truck came, but instead of giving out red bull they gave out free iced coffee!! I don't drink coffee but anything free is good and didn't mind a few sips :)

After a successful and exciting day 2 we headed back on the bus the our apartments. While some went out partying those of us who stayed went to a Mediterranean restaurant down the road and had half price pizza's and pasta yum! Before heading back and chatting in our room, the girls had an early night for their 800m final the next morning and some of the guys had the 5km run early on which i was looking forward to watching!!

Let the Games begin...

After a lovely morning walk in Bunbury along the inlet, before i headed to Perth i dyed my hair. I don't do it too often but when i do it is usually around the a time where something stressful comes up or i want to feel that i am still free to do things no matter how simple for myself to be who i want to be. With uni games coming up and exams looming in the not too distant future i wanted a small change which could boost my confidence in myself an din the words of Lady Gaga be 'as free as my hair!' So i dyed my hair a red/brown :)

After a nice drive back to Perth singing along to my music it was time to unpack one bag and pack another. Kyle came and took me to the airport and once I was checked in we met Abby and Mario who were also there for uni games (Abby went for volleyball) before sitting down to a coffee. I am always a little uneasy when it comes to planes, I love the views but like my feet on the ground more. But meeting many familiar faces from UWA and other WA uni’s heading over for the games eased my nerves and got me more excited!  We were on time and boarded the plane at 4.30pm, I was sitting with 2 lovely girls from Curtin who were studying chiropractics and were volunteering as part of the medical staff. I listened to my ipod most of the way and we landed sooner than I thought after 2 and a half hours. Yay we were in Adelaide!! The wind was freezing! Sharing a taxi I made my way to the Old Majestic Lyon apartments in North Adelaide. I was proud of myself to carry both my case and sports bag up two flights of stairs in front of all the footy guys (no they didn't offer any help) and met my team in the apartment J
I had a lovely night chatting to the team, they are so down to earth and fun! We were all tired after midnight but that just made our conversations funnier and i think we all hurt our stomachs laughing at our male pole vaulter trying to explain the mechanisms of vaulting, using the right stiffness of his pole and the length (if you get my drift... :P)

We slept in the next morning and after breakfast in the guys room it was quite hard to get to watch the other sports with our location so we made our way into the city for a wander and to buy some food for the week. We had a nice coffee in the Adelaide Arcade before getting costumes at the Reject shop and food at Woolies, there were so many uni students doing the same thing!! We met the guys and had lunch in the city before heading back.

Having a chilled afternoon i managed to do a little surgery study (boring i know!!) but i was not the only one, then went out to stretch my legs and walked around some university grounds and along the Adelaide river which was very pretty!! Just to make sure i could still run i had a quick run up some stairs but i felt pump and ready to run a race then and there no matter how fit i am! The guys cooked pasta that night which we all ate together and relaxed before heading to bed for the first day of competition :)

I was the first one up in the morning as no one else was doing the 1500m. So after a quiet breakfast i headed to the guys room to collect Dan and Andy who were also running the 1500. We got ourselves a taxi and i had my first glimpse of Santos stadium and the excitement set in!!

We watched the end of the 10km race before warming up, i was hesitant to run on my foot and with every stride was relieved when it did not hurt! Then the nerves set in. The guys ran first and had a difficult heat but both ran well!

 And then it was my turn to line up, there were 16 people in each of the two 1500m heats. I was excited to be lining up to race again no matter how nervous i was with no expectation as to how fit or unfit i am!!

 At the first 100m i was getting boxed in so took the move to go out ahead and let the others take over me one by one (which they did :P). One thing about not racing in a while is you forget how to pace yourself as you do not know how fast or fit you are. I went out a little harder than i should have, maybe it was just the excitement of running again! But by 2 laps to go the lactic hit... and it was the biggest lactic i have felt for years! One thing i learnt.... biking does not substitute the lactic preparation you get from running!!

 But as painful as it was i still enjoyed it, the freedom of running and pacing around the track! Best of all my foot held up and i crossed the line in a slow 5.08.11min (my PB is 4.47min) while the winners ran 4.50min. I didn't make the final but i expected that especially with that time! It is good to have a base line of fitness for the coming season providing my foot continues to improve :) I then spent the day at the track with the team and although i pulled out of the 400m had a great time cheering the others on and seeing our team mates pole vault, steeplechase and sprint! I loved being at the track all day!

That night we got back late and headed to Indian for a lovely and yummy dinner while half of the others went into the city for the night life. I was tired after the big day and those of us who stayed in had an earlier night after watching the Brownlow medals to prepare for day 2!
