Peanut Banana biscuits (Sugar and egg free)

Another Sunday, another trek across the college grounds to the laundry. But i like laundry day now, i challenge myself! While my washing is on i use the 26 minutes to see what 'healthy and easy' baking i can do while i wait :) This recipe was based on my other banana-oat cookie recipe, and i even had a minute to spare once i walked back to the laundry while my washing finished its last spin! Into the oven they then went as i pegged out my washing and when the pegging was done and washing was clean, i had a lovely warm biscuit and tea to sit down to. They are biscuits but they come out quite soft with no butter or sugar, sort of between a muffin and a biscuit... so i call them 'Muskits!' :)

Peanut Banana biscuits (Sugar and egg free) 

1 cup mashed ripe banana
1 teaspoon ground cinnamon
1 tsp vanilla essence
1/4 cup natural yughurt
1 1/2 cups rolled oats
1/2 cup SR flour
1/2 cup desiccated coconut
1/4 cup organic peanut butter or hazelnut spread (Macro :))
1/4 cup vegetable oil
Optional - 1/2 cup cranberries or sultanas

Preheat your oven to 180 C. (moderate oven)
Combine all the ingredients into a large bowl.
Mix together until combined.
Form 24 small cookies. You can use a tablespoon, teaspoon or your hands.
Flatten slightly then sprinkle with rolled oats.
Bake for 15 minutes or until golden.

Makes 24 small 'Muskits' 
Because i love peanut butter i warm them slightly and add a layer of peanut butter on top, and enjoy with a cup of tea, yum!
On a different note ever tried sliced apple with peanut butter? that is pretty good too!!
