Day 3 - Baking Day!!!

I had the best sleep i had in AGES last night and almost got 9 hours sleep! :) The rain and windy winter weather seems to have set in for the week so there was no trips to the beach with the puppies this morning, but instead a lazy morning on the computer and reading the newspaper before i headed to the Forum for a little look around. I finally got a hair cut too and my fringe cut back then got some ingredients to do some much anticipated baking!

After a couple of hours in the kitchen i made a yummy and healthy banana-oat slice with cranberries and walnuts, i love the taste of it!
Ingredients at the ready

Banana-Oat slice

2/3 cup pecan nuts, walnuts and cashews roughly chopped
2 1/2 cups rolled oats
2/3 cup self-raising flour
1/2 cup dried cranberries 
1/2 cup brown sugar

125g (1/2 cup) Flora pro-active original, melted (or any butter) 
2 tablespoons golden syrup
2 ripe bananas, mashed
1 egg, lightly beaten

2 tablespoons sunflower seeds

Preheat oven to 180 degrees. lightly grease an 18x28cm slice tin or line it with baking paper.
Place dry ingredients in a bowl and stir in butter, golden syrup, banana and egg and mix well.
Spoon into prepared tin, smooth surface with a spatula or knife and sprinkle with sunflower seeds.
Bake for 25-30 minutes or until golden brown and firm to touch. Mark into 16 slices while still warm.
Serve either warm or cold. (I froze half to keep it longer and fresh :))

Then i got onto some Vanilla-Berry Cheesecake cupcakes for desert tonight with Nicole and Dan coming over for a Sunday night family meal. I don't think i had made cheesecakes before and was quite happy with how they turned out! I had no complaints from anyone and they were demolished so they must have passed :)

We have had some wind weather today and nearly had our own fence blown over, mum and i went for a little drive and took some pictures around the town when it had died down. There are quite a few trees ripped up from their roots and power poles down from the strong winds! Thankfully our house is OK but we have some more strong winds and storms coming, thousands of houses are without power but we have some at least. I hope its not too stormy throughout the week so i can still drive down to Denmark!
